MAKE SOME HATS TO ACCESSORIZE YOUR DISHES:
6lb Kabocha Squash, seeded, peeled, cut into ¼” thick
3/4 cup olive oil
2 yellow onions, finely diced
1 tsp togarashi
2 tbsp kosher salt
½ cup champagne vinegar
½ cup maple syrup
½ cup golden raisins
½ cup toasted pepitas
STEPS:
Heat oven at 375 degrees. On a sheet tray, combine squash, olive oil, onions, togarashi, salt, champagne vinegar and maple syrup. Roast in the oven for about 20-25 minutes until squash is soft.
Rest and cool the roasted squash.
In the food processor, puree roasted squash mixture until combined.
Transfer the squash mixture into a bowl and stir in golden raisins and pepitas. Stir to combine.
STICKY RICE:
4 cups of forbidden black rice, rinsed and soaked for 1 hour in room temp water
7 cups water
TEZU :
4 tbsp rice vinegar, unseasoned
4 tbsp brown rice syrup
2 tsp salt
STEPS:
Cook rice in a rice cooker machine.
In a sauce pot, combine rice vinegar, brown rice syrup and salt. Heat liquid until syrup completely dissolves.
Cool down rice completely.
In a plastic bowl (NOT METAL BOWL) stir in rice and vinegar mixture. Keep rice aside.

STEPS:
Cut nori into rectangles about 3.5"x 5.5". On the far third part of the nori, place about 1 tbsp of rice and 2 tsp squash mixture leaving a triangular tab and small room below the filling free on the filled third side and a square area free on the other side. Rolling tightly, fold over the triangular tab covering the filling and making a point creating a cone shape. Continue to roll into cone shape until last triangular edge is visible and add a grain of cooked rice to seal together. Flip with cone end facing up. Flatten the bottom excess to form a brim and make a cut if necessary. Tie an Asian Chive Bud around the base of the hat. Finish and plate with a pile of Micro Bulls Blood microgreens for the hair!
